
Comfort food in my opinion is not just for cold weather, raining days or when you might feel under the weather! Comfort food is meant for the entire year. As the nights get cooler and the salad items dwindling in the garden, chores are done earlier, and darkness comes at dinner time. The need for comfort food is a welcoming sight on the table.
Meatloaf is one of my family’s favorite comfort foods! Yes, meatloaf, mashed potatoes, zucchini with tomatoes, basil, and a sour dough roll on the side!
Oh, then the leftovers the next day! A slice of fresh sourdough bread is quickly converted to a yummy Italian sandwich with lots of sauce paired with a pile of veggies!
Freshly ousted from the earth potatoes, mashed to creamy perfection. A little fall zucchini, wilted with a little bone broth, onions, tomatoes, basil, sprinkled with a little parmesan cheese.
I am excited we grow white and sweet potatoes for our family. I am excited to grow beans and other legumes, squashes and corn. These healthy carbs will fuel our family and of course, give us the comfort food we so enjoy!
So, eat meatloaf and mashed potatoes! Celebrate health! Feel Great. Heal your body with food. It will thank you.
Farmgirl Meatloaf
2 pounds grass fed, grass finished beef (or venison)
5 eggs whites – NON-GMO – Farm Fresh Free range is the best (or 1/2 cup whites for carton)
1 tablespoon onion powder
1 teaspoons of garlic powder
2 tablespoons of Italian seasoning
1/4 cup of parmesan cheese, grated fine (green top can is ok too)
1/4 cup THM nutritional yeast (optional)
3/4 cup old fashioned rolled oats or 1/2 cup of breadcrumbs made from sourdough or sprouted bread
1 tsp THM mineral salt
1 can tomato paste (smear on the top before placing in oven)
4 TBS finely shredded low-fat skim mozzarella
Place ground meat in a large bowl. Add ingredients as listed. Mixing with a large fork, fold all ingredients together. Do not over mix.
Form into a loaf and place in cast iron fry pan.
Place in preheated oven.
Cook at 350 degrees – 45 to 50 min. Remove when internal temperature is 155 degrees. Sprinkle a little mozzarella cheese on top. Cover. Rest meatloaf for around 7 to 10 minutes. It will continue to cook and reach an internal temperature of 160 degrees.
Mashed Potatoes
Steam or boil potatoes of choice until tender.
Drain.
Place back in kettle or mixing bowl. Whip in defatted broth, salt, pepper, and egg white from one egg. Whip until fluffy! Serve.
